    Cheese的世界

         趁着闲来无事,就天天研究美食,把蔡澜的节目看了个透:《蔡澜叹名菜》、《蔡澜逛菜栏》、连带着还买了书,真是好不痛快~

         蔡老是新加坡人,早年移民香港。大概因为年代的关系,不比新一辈的香港食评家中西并重,从始至终还是钟情于亚洲饮食,对西方的食文化颇有抵触。只有提到Cheese的时候,露出了难得的虔诚态度,说:“芝士是一个世界、一个宇宙,你打开那扇门,就多了好多好多层次,让你慢慢、慢慢研究下去……”后来还有两次听到他讲类似的话,一次是说榴莲、一次是花椒。

         对食物的态度,我向来秉承着“严谨”二字。而心里却是清楚,“开放”的态度同样重要。偏偏生来就是四川人,嗜辣如命。一个人的味觉,如果一开始就习惯“辣”这样浓烈的滋味,那么要他适应并且欣赏其他口味,是非常难的。这一点,我感受至深。

         在成都,我们总是笑那些不会吃辣的外地人“你错过了很多”。离开家这么些年,我开始觉得,错过的其实是我们。吃东西,是要学的。在我,花了差不多一年的时间,才真正学会了解杭帮菜的鲜咸、本帮菜的浓稠、广东菜的精致……以中华饮食文化之博大精深,每一种菜系都有它出彩的地方。而这些,都是需要真正静下心来、做多次尝试才能感受的。

         要让舌头慢慢脱离对辣(或者某一种你习惯了的味道)的依赖,回归它最质朴、最敏感的状态,才能更好的分辨食物的味道。如果只是吃一口、尝一顿,是没有资格说“不好吃、不喜欢”的,因为那只是“不习惯”。要由浅入深、一步一步慢慢来。直到这个新鲜事物可以随时入口,甚至成为日常饮食的一部分,才有评论的资格。而我接下来要征服的世界,是榴莲、臭豆腐、还有最让我头痛的,Cheese。

    我前一阵跟着蔡老学了一道菜,是香港大排档的普通菜肴,如果没记错的话应该叫大眼姬鱼汤,但是原材料稍有不同,我用的是菜场买的花鲢,味道很棒……至于cheese,我吃得太少,没资格评论,呵呵,尤其不习惯冷着吃

    但是也是需要比较,才能品出酒的浓郁,品酒的时候也是要吃小块cheese的呢
    我还蛮喜欢楼下餐厅的白cheese的,后来也逐渐开始吃cheese了,但是橙色的味道重的还是不习惯

    我现在基本吃不了辣了。唉,愧对父老乡亲啊。倒是很喜欢粤菜,喜欢吃早茶。

    好想念你做的土豆牛肉~~~>< cheese其实真的很好吃,以前还真是吃不惯,最近我都是把芝士片放在三文鱼上到烤箱里烤,很棒的,还有你上次告诉我有一种香料配牛肉很好吃,是什么来着?
